Garlic Butter Steak Bites with Roasted Veggies

Ingredients:

For the Steak Bites:
• 1.5 lbs sirloin steak, cut into 1-inch cubes
• Salt & black pepper
• 2 tbsp olive oil
• 3 tbsp unsalted butter
• 4 garlic cloves, minced
• 1 tbsp chopped parsley
For the Roasted Veggies:
• 2 cups baby potatoes, halved
• 1 cup carrots, sliced
• 1.5 cups broccoli florets
• 2 tbsp olive oil
• 1 tsp Italian seasoning
• Salt & pepper

Instructions:

1. Roast the Veggies:
Preheat oven to 425°F (220°C).
Toss potatoes, carrots, and broccoli in olive oil, salt, pepper & Italian seasoning.
Spread on a baking sheet and roast 25–30 minutes until golden and tender.
2. Prep the Steak Bites:
Season steak cubes with salt & pepper.
Heat a cast iron skillet over medium-high with olive oil.
Sear steak in batches (don’t overcrowd) for 2–3 minutes per side. Remove and set aside.
3. Make Garlic Butter Sauce:
In the same skillet, reduce heat to medium.
Add butter and garlic. Sauté 30 seconds until fragrant.
Return steak bites to the pan and toss to coat. Finish with parsley.
4. Serve:
Plate steak bites with roasted veggies and spoon extra garlic butter sauce on top.
